The experience

The art of shabu-shabu begins with the cut.

Our A5 BMS 11–12 wagyu is machine-cut to an exact 1.5mm, creating slices delicate enough to cook in seconds and richly marbled enough to transform the broth with every swish.

Each portion is carefully arranged in a premium skin package, ready to take directly from refrigerator to table. Alongside the wagyu, every set includes two house-made sauces prepared by Chef Keiji Matoba: Ponzu and Gomadare, each designed to bring out a different dimension of the beef.

Add your own kombu dashi, gather around the table, and cook each slice for just a few seconds.

This is shabu-shabu at its most precise.

  1. The set

    Every Shabu Shabu Set includes:

    • A5 BMS 11–12 Ito Matsusaka wagyu
    • Precision-cut 1.5mm shabu-shabu slices
    • Premium skin packaging for presentation and easy serving
    • Chef Keiji Matoba's house-made Ponzu
    • Chef Keiji Matoba's house-made Gomadare
    • A copy of the JMGA certificate and the beef's traceable ID number
    • QR code preparation guide

The sauces are made specifically for this preparation — bright, citrus-forward Ponzu for contrast and a rich sesame Gomadare for depth.

  2. Chef Keiji Matoba's sauces

    Ponzu

Bright, clean, and aromatic, our house Ponzu cuts through the richness of A5 wagyu with a sharp citrus finish.

    Allergens: Soy, Wheat

    Gomadare

Rich, nutty, and deeply savory, our house Gomadare brings out the creamy character of highly marbled wagyu.

    Allergens: Sesame, Soy, Wheat

Two sauces. Two completely different expressions.

  3. How to enjoy

    You provide

You supply: kombu dashi and a pot. Dashi is not included.

    1. Prepare a light kombu dashi.
    2. Bring the broth to a gentle simmer.
    3. Take one wagyu slice at a time.
    4. Swish through the broth for approximately two seconds.
    5. Dip into Ponzu or Gomadare.
    6. Eat immediately.

The goal is not to cook the beef longer.

The goal is to catch it at exactly the right moment.

  5. Provenance & care

How should I store this set?

Not preparing it soon? Keep the original packaging sealed and store the beef in a freezer at 0°F / -18°C or below.

Preparing it for an upcoming meal? Place the sealed package on a tray on a lower refrigerator shelf, away from ready-to-eat foods. Keep your refrigerator at 40°F / 4°C or below.

Follow the storage and date instructions on your product label, including any shorter limits. USDA generally allows 3-5 days for steaks and roasts after safe refrigerator thawing. For thinly sliced portions and included sauces, follow their specific label instructions and prepare promptly. Do not apply a steak storage period to a different product.

How should I thaw this set?

If frozen, thaw the sealed package slowly in the refrigerator. Timing varies with the cut and the refrigerator. The beef is ready when it is soft and cool to the touch.
