Masterful Butchery by Matoba

Bringing Ito Ranch Matsusaka to the American table

Masterful Butchery by Matoba brings together Chef Keiji Matoba and Mitsu Boshi USA to offer Ito Ranch Matsusaka beef for dining at home in the United States.

Our focus is the experience around the ingredient: how it is cut, what accompanies it, and how it is prepared at your table.

A partnership with a purpose

Mitsu Boshi USA, the exclusive North American distributor for Ito Ranch Matsusaka, provides the connection to the producer. Chef Matoba brings the culinary perspective, shaping the preparations and accompaniments through which the beef is enjoyed.

Together, they created MBM to give retail customers an opportunity to experience the ingredient with that culinary attention already in place.

The partnership connects two responsibilities: knowing where the beef comes from, and understanding how to prepare it.

From an ingredient to an experience

We begin with the way you would like to dine.

Shabu Shabu invites a gathering around a simmering pot. Sukiyaki brings the richness of beef and a sweet-savory sauce together in the pan. Yakiniku is enjoyed in small portions from the grill. Steak Cuts offer a more focused preparation, built around the sear and a simple seasoning.

Each experience calls for a different approach to the beef. The thickness of the cut, its preparation, and its accompaniments are considered together—not treated as separate decisions.

What “by Matoba” means

The chef’s involvement is expressed in the details.

It is there in the preparation-specific cuts, the individually hand-trimmed steaks, and the sauces and seasonings created to accompany the beef. A citrus dipping sauce serves a different purpose from a sweet-savory cooking base; a steak calls for a different approach from a delicate slice intended for broth.

These choices give each experience its own character while keeping Ito Ranch Matsusaka at the center.

Made for your own table

Your beef arrives cut and portioned for the preparation you choose, accompanied by its sauces or seasoning. The work of preparing those elements has already begun before you open the package.

What follows belongs to you: the setting, the people around the table, and the pace of the meal.

We want the experience to feel welcoming whether you know Japanese Wagyu well or are discovering it for the first time. Learning about the ingredient should deepen the pleasure of eating it—not make the occasion feel more complicated.
